okay, so I totally stole this recipe from my sister and BIL. they dont have a blog though, so no harm done. (maybe I should say, they dont read my blog, so no harm done. ha ha)
maybe its because Im Hispanic. maybe its because I hail from Phoenix, Arizona. maybe its cause I grew up hardly ever eating Mexican food. I dont know what the reason is, but I LOVE Mexican pizza. the green chiles! the beans and melted cheese! the BEEF!! yum yum. my favorite Mexican Pizza is from La Pinata, a little hole in the wall place in Central Phoenix. while this isnt the same, it is freaking awesome.
cooked roast
can of refried beans
packet of taco seasoning
burrito-size flour tortillas
melted butter
tomato
green chiles (you can use the ones in the can. I use the frozen hot kind because they taste "fresher")
cheese
cilantro
avocado
take a tortilla and brush it with the melted butter. dont go crazy with the butter or your tortilla will be soggy. place another tortilla on top of the first one. brush the second tortilla with butter. place in a 350 degree oven for 5 minutes. (use a cookie sheet, please.)
warm the roast in a pot. add the packet of taco seasoning. stir until its well mixed. add the can of beans. you just want to warm it up and get it all incorporated.
take the bean/roast mixture and spread it on the crispy tortillas. add cheese, green chiles, tomatoes, and cilantro. pop back in the oven for another 5 minutes.
slice up avocado, sour cream, olives, whatever toppings float your boat.
I made this for Sweetheart last night and got a great back rub AND quiet time to read in return. life is good.
